The result of the process débouillantage and freezing shock provided by our own facilities, the pinkies are free from any bacteria and can be considered as sterile. The residual fraction of bacteria, mold and mildew is in fact well below the applicable standards for food and feed. The frequent monitoring supported by analyses to ensure careful monitoring of the entire procedure. This double standard makes the pinkies even more digestible.
